I made these cookies — I'd call them 'sablés des anges' if I had a French bakery, and they are too good to be kept as a family secret. Feel free to save or forward this recipe as you wish. Oh and a 10-minute audio transmission — this is about the time you’ll need to make the dough.
You are welcome to replace the ingredients with your preferred alternatives.
Sablés des Anges — the recipe
Makes 12/15 cookies (depending on the size of your cookie cutter)
Ingredients:
250 grams of flour
150 grams of soft, unsalted butter
65 grams of brown sugar (or coconut sugar)
1/2 teaspoon of bourbon vanilla powder
1 egg yolk
1 teaspoon of ground cinnamon
1 teaspoon of ground cardamom
A handful of flaked almonds
Optional: the contents of 2 tea bags of Bengal Spice Tea from Celestial Seasonings
Follow your intuition!
Steps:
In a mixing bowl, combine flour, sugar, vanilla, cinnamon, cardamom, and optional other spices (Bengal Spice Tea or alternative).
Make sure the butter is soft and cut it into small pieces. Add the butter to the mixture (use your hands!!).
Knead the ingredients together until the dough has a 'sandy' texture.
Add the egg yolk + the flaked almonds and form the dough into a ball.
Note: It's best to refrigerate the dough for 30 minutes.
Preheat the oven to 170°C.
Lightly flour your kitchen worktop and roll out the dough. Use your cookie cutter to cut out the cookies and place them on a baking sheet lined with parchment paper.
Bake the cookies in the preheated oven for 8 to 10 minutes. Be sure to keep an eye on them while they bake.
Allow the cookies to cool. Then enjoy with a warm cup of tea.
